Quinoa with Olives, Sundried Tomatoes and Feta Cheese

My friends and I had a super cool place to hang out and eat and listen to good music…
And we’d go there and have the best Margaritas and Pizza.
Hand tossed Pizza with Olive Oil, Kalamata Olives, Sundried Tomatoes and Garlic.
Take me to heaven, baby.
But those days of carefree, lazy days are long past gone and just a distant and very pleasant memory…
So is eating Proud Larry’s Pizza.
Now, I turn in a vain attempt to recreate…nay, capture the essence of that time.
Yes… with Quinoa.
I know… NOT THE SAME.
But that’s life, baby.
And it’s the best I can do…it’s wonderful in its own stay-at-home, Mom-jean-wearin’ kinda way…
All you do is:
Cook the Quinoa… follow the directions on the package, please.
Fluff and and a couple tablespoons of Extra Virgin Olive Oil…
Pit what you thought were already pitted Kalamata Olives….
Chop the olives and the sundried tomatoes… you can find those in a jar marinated with olive oil….
Just dreamy.
Add some garlic {a clove or two… I take two or more… MMMM…}
Season to taste with salt and pepper…
And the kicker?
Top with Feta Cheese.
Can you hear the Angel Choirs all in one mighty chorus?
They are singing, “Gwen…don’t eat that entire bowl or you’ll have to go buy a bigger pair of Mom-Jeans!”
Sometimes, I listen.
Sometimes, I don’t.

I love everything in this, so pinning it. A couple weeks ago I made the egg/cauliflower recipe for a faux pizza crust and I loved it. Of course it’s NOT pizza crust, but you can pick it up and it gave me the feeling of having a slice.

Today, I went to the beach front with my children. I found a sea shell
and gave it to my 4 year old daughter and said “You can hear the ocean if you put this to your ear.” She placed the shell
to her ear and screamed. There was a hermit crab inside and it pinched her ear.
She never wants to go back! LoL I know this is entirely off topic but I had to tell someone!
