Falafel Chicken Tenders

So it snowed for about ten seconds today. And what was so weird is that the sun was totally streaming in through my windows.
Now the snow is gone, and we’re movin’ on to these amazing exotic and delicious Falafel Chicken Tenders.
Side Note: No, it did not really snow yesterday. I wrote this post a few months ago and it just posted today.
We here, think falafels are awesome.
So, it follows that if you take the fingers from a chicken and coat them with falafel mix, they too shall be awesome. Right?
Yes. Yes it does. And yes, they are.
This recipe {if you can call it that because it’s too easy} is too easy.
All you have to do is take your chicken tenders and soak them in an egg bath. To make an egg bath, just scramble one egg with 1TBS of milk or water.
I used about 3 eggs for about ten chicken tenders.
Let them soak for about 10 minutes, and then dredge them in your falafel mix.
Deep fry {if you dare} or bake in a 400 degree oven for about 20 minutes. Make sure you grease your pan first. I’ve never deep fried them, so you’re on your own when it comes to how to do that.
Serve with something healthy like green beans.
You can make a yogurt dip if you like. I usually just buy one of the sauces by the falafel mix. It’s just easier on this busy mom.
