In it, you’ll find my mother’s Caramel Applesauce Cake.
And as far as I know… it’s never been published…This is the version my mom uses…
Her handwritten recipe…
I can’t remember a Christmas without it. When we got together this Thanksgiving and made it, she told me it came from her neighbor, in Roanoke, Mrs. Fagan. Mrs. Fagan sent it home with her at Thanksgiving and told her to keep it in the refrigerator and not eat it until Christmas!
And Mom said it was still good! Can you imagine? This cake would never have lasted in my fridge for a month!!!
It’s amazing…
First you have to boil the applesauce with the soda…
And it makes this wonderfully thick batter…
And this is the pan my mom originally baked her first one in… about fifty years ago!
Tell me that ain’t one pretty cake!
But, oh! It’s not anything until you get that icing made!!!
Just look at it… slap yo’ momma!
{not really, Mom… I adore you.}
And you all would, too, if you met her… Isn’t she so cute?
And isn’t she just mouthwatering???
We all shared a piece before we went out on a picnic… You can see what went first… all the icing!!!
That’s my sweet family… I’m so blessed.
