And I am happy to oblige! These babies are truly guilt free when made with Almond Flour and Stevia in the Raw… oh, and dark chocolate chips.

Did I just hear you ask for the recipe?  MY secret recipe???  The recipe for the Chocolate Chip Banana Nut Muffins that have my boys jumping out of bed at the crack of dawn???

Chocolate Chip Banana Nut Muffins: Or A Little Puff of Heaven

Chocolate Chip Banana Nut Muffins: Or A Little Puff of Heaven

Yield: 12

Ingredients

  • 1 1/2 Cup Almond Flour
  • 1/4 Cup Bob's Red Mill Gluten Free All Purpose Flour
  • 1/4 Cup Ground Flax Meal
  • 2/3 Cup Stevia in the Raw or Granulated Sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon {optional}
  • 3 ripe bananas
  • 2 eggs
  • 1/3 cup butter {melted}
  • 2 tsp vanilla
  • 2 Tbs of Almond Milk {or cow or soy}
  • 1/2 Cup Chopped Pecans {or Walnuts}
  • 1 Cup Dark Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease Whoopie Pan or put liners in a regular muffin tin.
  3. Mash Bananas.
  4. Whisk eggs, melted butter, milk and vanilla.
  5. Add to bananas.
  6. In a separate bowl, combine almond flour, all purpose gluten free flour, ground flax meal, Stevia in the Raw or granulated sugar, baking powder, baking soda, salt and cinnamon if using.
  7. Add to the banana mixture and combine.
  8. Stir in nuts and chocolate chips.
  9. Fill muffin or whoopie cups almost full.
  10. Bake for 20-24 minutes, depending on your oven.
  11. Allow to cool for at least 5 minutes before removing from the pan.
  12. Makes 8-10 delicious muffins.
