Cinnamon Almond Bites

Sometimes, you just have to have something sweet, and if you’re gluten free like me (and cookies are your favorite)  what do ya do?

I mean, have you tried the things they call cookies in the gluten free aisle?  Yikes.

I had a hankering for some snickerdoodles last week, and these Cinnamon Almond Bites totally fit the bill.  Yum!

They’re very easy to make, too… bonus.

Cinnamon Almond Bites

Ingredients

  • 1 1/2 cup of Almond Flour
  • 1/3 Turbinado (Cane) Sugar
  • 1 Tablespoon Ground Cinnamon
  • 2 Egg Whites
  • Parchment Paper
  • Powdered Sugar for coating

Instructions

  1. Preheat the oven to 350 degrees. Tear a sheet of parchment paper and set it on your cookie sheet.
  2. Mix together the almond flour, sugar and cinnamon.
  3. Beat egg whites in a mixer until they start to stiffen and fold them into the flour mixture, which will be fairly firm.
  4. Roll small spoonfuls of the dough into balls and place on your parchment covered baking sheet.
  5. Bake for about 15 minutes. They should be slightly soft inside.
  6. Allow them to cool before you roll in your powdered sugar.

The boys love these, as does Hot Shot.  Somehow he managed to eat about 5 of them when our backs were turned.
