CrockPot Chili Recipe for a Big Crew!

We love a big pot of chili over here at The Bold Abode.

I can make this recipe and Morgan will eat on it for a week. And when it’s cold outside, baby is this a great way to warm up!

What is in this crockpot chili recipe?

You will need:

  • 1 pound ground beef
  • 3 cans of beans
  • 2 large (28oz) cans of crushed tomatoes
  • 2 small cans of petite diced tomatoes
  • 1/2 green pepper – chopped
  • 1/2 yellow onion – chopped
  • 3 cloves garlic – minced
  • 2 TBS Italian seasoning – dried
  • 2 TBS Chili Powder

Can I use some other kind of protein?

Absolutely! Any meat you want to use that can be ground will work. Ground turkey, ground chicken, ground pork.

You can even make it vegetarian and use tofu.

What kind of beans should I use?

We love a variety of beans. I ususally use a can of black beans, a can of red Chili beans and a can of pinto beans.

But you can use what every beans you like. I find that any variety of bean works, you just need 3 cans.

If you don’t want that many beans, because this recipe is bean heavy and we love beans here, you can just use one or two cans. It’s OK!

Can I use regular diced tomatoes?

You can. We are not big fans of chunky, chunky chili, so I use the petite diced. But if you love a nice chunk of tomato, go for it!

Can I use fresh herbs instead of dried seasoning?

Yes! Fresh herbs are always way more aromatic. Just double the amount because dried herbs are more concentrated.

If you want to use fresh herbs, I suggest a combination of:

  • Oregano
  • Basil
  • Thyme

If I don’t have fresh garlic, what do I do?

You can substitute 1 tsp of garlic powder if you don’t have any fresh garlic. It will work, but garlic powder just doesn’t have the same Umph as freshly minced garlic.

I buy pre-peeled garlic to have on hand or minced garlic in a jar.

What should I serve with the chili?

We love topping it with Shredded Cheese, Sour Cream and eating it with Frito Scoops.

But you could bake some potatoes and top the potato with chili. That’s a great way to eat it.

Ingredients

  • 1 pound ground beef
  • 3 (15oz) cans of beans
  • 2 large (28oz) cans of crushed tomatoes
  • 2 small (14.5oz) cans of petite diced tomatoes
  • 1/2 green pepper - chopped
  • 1/2 yellow onion - chopped
  • 3 cloves garlic - minced
  • 2 TBS Italian seasoning - dried
  • 2 TBS Chili Powder
  • Salt and pepper to taste
  • 1/4 tsp Dried red pepper (if you want it spicy)

Instructions

  1. Brown ground beef (salt and pepper to taste)
  2. Add minced garlic to beef and saute for a couple of minutes to open up the garlic.
  3. Saute chopped onion and green pepper in a little olive oil until tender (just until it's a little bit soft. It will cook fully in the crock pot.)
  4. Pour crushed tomatoes, diced tomatoes with juice, and beans into the crock pot.
  5. Add meat and sauteed veggies.
  6. Add Italian seasoning, Chili Powder, and Crushed Red Pepper.
  7. Salt and pepper to taste.
  8. Mix thoroughly!
  9. Cook on high for about four hours, stirring occasionally.
  10. After about four hours, turn the crock pot down to low if you're not ready to eat it yet.
  11. Serve with shredded cheese, sour cream and Frito Scoops! (our favorite chip to eat with chili!

This is a staple for us when cold weather hits!
