3 Ingredient Peppermint Marshmallow Squares

I woke up this morning in a panic. I hadn’t planned any Christmas treats AT ALL!
What is Christmas without rivers of sugary goodness flowing from the hot and steamy kitchen? What is the holiday break without intoxicatingly sweet smells wafting though the house?
I can just imagine my kids ten years from now telling my grandbabies all about that disastrous Christmas of twenty-fourteen when their mom flaked and tried to pass off bowls of cereal sans milk as the “new Christmas trend” instead of hot-piping chocolate cookies and fudgy delicacies.
Hair pulling ensued.
I ran to the cabinets to see what was there. Would they be bare?
Miracle of miracles! What would appear but a bag of Peppermint marshmallows and chocolate chips!
Christmas was saved and I whipped up a batch of these most delectable 3 Ingredient Peppermint Marshmallow Squares. It is literally the quickest and easiest Christmas treat I’ve ever made in all the years of service to my little family.
It’s almost as if Santa sent his elves to make them for me, they were that easy.
All you need is:
- 1 bag of Peppermint Marshmallows {I found these at Target by chance. You can use any flavor if you can’t find peppermint}
- 1 Cup of Pecans
- 1 10oz bag of chocolate chips
To make the squares:
- Grease an 8×8 pan
- Melt 2TBS butter in a large pot.
- Stir in and melt the chocolate chips until smooth.
- Remove from heat and allow to cool for 8-10 minutes so you don’t melt the marshmallows.
- Stir in the marshmallows and pecans.
- Pour into the greased pans and refrigerate for 2-3 hours or until chocolate is thoroughly set.
- Cut into squares and chow down.
These fellas got four thumbs up from my boys. Can’t beat that!

I didn’t know peppermint marshmallows existed…I love peppermint treats, thanks for sharing! I make a similar cookie, we call them Church Windows. Same recipe, but we roll the mixture into logs w/flat bottom & rounded top. Sprinkle shaved coconut over the entire top of the log, wrap, then freeze for at least an hour so the form of the log is preserved. Then when you slice the roll, each piece looks like a stained glass window with snow. Easy-peasy! My friends & family have come to expect their roll each year. So yummy…but I can’t wait to try the peppermint version, not even sure I’ll wait till Christmas!
