Do you ever struggle trying to come up with something to have for dinner on Christmas Eve?

I mean, Christmas dinner is pretty easy… the traditions go back years and years, right?

But Christmas Eve. Now that’s another animal entirely.

We have a few favorite things we do, and they seem to be family favorites, so I thought I’d share them with you!

Stir Fried Rice

The past few years, we’ve treated ourselves to carryout from our very favorite Japanese restaurant!

We get all kinds of appetizers and main dishes. But the most important thing we do? TIP like crazy!!! I mean like 30%.

I feel like it’s OK to do carryout on Christmas Eve, because the service staff is working anyway. But I want to make sure they are compensated really really well!

Spaghetti and Meatballs

Growing up, we always had spaghetti! We’d fix a large garden salad and have fresh garlic toast.

If we do Italian, I’ll make some yummy foccacia bread and make sure to have really good ingredients, like homemade marinara and fresh pesto.

We all love spaghetti and it’s a great comfort food type meal to have for Christmas Eve!

Chicken and dumplings

It’s been years since I’ve made this dish, but when I went home to help take care of my mom after a heart procedure, I made her favorite dish!

Chicken and Dumplings with Bisquick! No it’s not Martha’s recipe, but it’s so good. Soft, pillowy dumplings in a thick chicken broth. It’s so good!

Serve with your favorite greens – green beans, English peas, or a nice garden salad!

Spicy Chicken Tacos

We do love our Mexican food over here! You can even buy some shredded chicken from Sam’s or Kroger. It’s actually really good for a prepared food.

Add in some fresh cilantro salsa and some White Queso and chips and you’ve got a delicious Christmas Eve dinner that will surprise all your guests!

Chicken Carbonara

Have you ever made this dish? It’s actually not that hard! I admit I was nervous the first time I made it, but it was so much easier than I thought it would be!

Serve it with a nice Caesar Salad and some garlic bread for a delicious meal!

White Buffalo Chicken Chili

We love regular chili, but this white chicken chili is to die for! And you can just pop everything into a crockpot in the morning for a super easy dinner.

Which is great if you have other activities that day! Then you don’t have to worry about it.

You can make some dutch oven bread to serve with it. That would be amazing!

Baked Potato Bar

A Baked Potato Bar might just be the thing! You can prep all the toppings ahead of time and bake your potatoes in the crockpot!

Serve with a nice green or Caesar Salad!

Italian Meatloaf

Now, I’m not a big meatloaf fan, but Italian Meatloaf has got my number! It’s so delicious. Morgan absolutely loves it too!

Serve with some Garlic Mashed Potatoes and some baby broccoli! Yumz.

Chicken Pot pie

Like Chicken and Dumplings, Chicken Pot Pie is such a fantastic comfort food to serve on a cold night!

I love the huge one from Sam’s. It’s absolutely amazing!

But you can make your own easily! Just buy your pie crusts premade and it will be a cinch!

Serve with some crusty bread.

Cheeseburger Mac & Cheese

This is a perfect dish if you have kids… big or little!

I grew up eating box mac but I always made it from scratch for my kids.

When Brendan was in his teens, I made some from the box and he was like…what is THIS? LOL

Serve with some Sourdough bread and some grilled asparagus or green beans!
