Hot and Spicy Baked Sweet Potatoes

I love sweet potatoes. I could eat them in a box and with a fox and on a train and in the rain.
I could eat them baked, roasted, fried, with butter or just plain.
But these Hot and Spicy Baked Sweet Potatoes are my bff. They hit all the spots on the tastebud scale! Sweet, spicy, savory… everything.
And if you are sugar/gluten free, these guys can be a really great way to curb that sweet tooth without going crazy on the chocolate aisle.
They are wonderful for dinner or an afternoon snack. Heck, I’ve even eaten them for breakfast!
Here is how to make them:
Cube two to three sweet potatoes.
Toss them in a tablespoon of Extra Virgin Olive Oil.
Sprinkle with a pinch of Crushed Red Pepper and salt to taste.
Bake them in a 400 degree oven for around 30 minutes or until they are nicely browned and maybe even just a bit charred.
Did I mention that these are literally one of my most favorite treats? I went for a whole week one time eating these every single day.
I might have to go on another Hot and Spicy Baked Sweet Potato binge. I hear them calling!
