Mini Baked Omelets

Let’s face it. Sometimes, I just don’t want to cook. Day after day, getting up early, packing lunches, feeding and peeing giant moster-labs… it’s a lot.
So, I have this little trick up my sleeve. These quick and easy Mini Baked Omelets.
I can make them ahead of time and they last for two to three days.
Holla.
All you need to make twelve mini baked omelets is:
- One Dozen Eggs
- 1 Pound Sausage
- Shredded Cheese to garnish
- Salt and Pepper to taste
First, brown your sausage.
Then whisk your eggs in a bowl… as if you’d do it in a bucket or something.
Then, grease your whoopie or muffin pan. I use this one which you can get on Amazon. <=Amazon affiliate link for easy online ordering.
Spoon equal amounts of sausage into the cups.
Then cover with the eggs.
And garnish with cheese.
Bake in a 350 degree oven for about 20 minutes. I always check around 15 just to make sure they are ok.
Store in an airtight container and re-heat as needed.
Hmm… I should go make some right now for breakfast tomorrow.
