Gluten Free Pancakes Make Me Go Yum…

Of all the things that make me go YUM… These Gluten Free Pancakes are at the top…
I mean, if you have to go gluten free, isn’t is just fantabulous when you can have an almost-the-same-taste treat?
Who wants to be deprived? NOT ME.
So, here’s my recipe for some super-healthy AND delicious Gluten Free Pancakes…
Mix ‘em up…
Spoon ‘em out…
Watch ‘em fluff… {that’s the best part… }
Slap a HUNK of butter on top…
And Chow down!!!
Oh, Man… talk about YUM-to-the-YUM, YUM!
Here’s the deets… you might have to play around a bit to get it just right for you.
You’ll notice I use all of my 3 Gluten Free Must Haves here… You CAN use just the pancake mix, and baby… it’s divine.
It just happens to be way to high in carbs for me to tolerate, so I use the Almond Meal and Ground Flax to tone those suckers down… and you can’t hardly tell…
Gluten Free Pancakes
Ingredients
- 1 Cup Ground Flax Meal
- 1 Cup Almond Meal
- 1 Cup Bob’s Red Mill Pancake Mix
- 2 TBS Baking Powder
- 4 TBS Stevia in the RAW or 6TBS of Sugar
- 1 1/2 tsp salt
- 4 TBS Butter, melted
- 3 eggs, beaten
- 1-1 1/2 Cups Milk
Instructions
Beat milk, butter, and egg lightly in a mixing bowl. Mix the Flours, baking powder, Stevia {or Sugar} and salt and add them all at once to the liquid mixture, stirring just enough to dampen the flour. Add additional milk as needed.
Grease an electric griddle. Spoon 1/4 cup of batter onto the griddle. Cook until bubbles form and begin to pop and bottom of pancake is golden brown. Flip and cook until other side is golden.
Makes about 12 large pancakes. Serve with butter and/or syrup.
EAT.

These look great, but are you sure about the 4 tablespoons of stevia? I can’t imagine that, stevia is so potent! I found that coconut palm sugar is a great alternative.
Oh, yes… but it’s the Stevia in the Raw powdered kind… I should update this post to reflect it!
Your pancakes look amazing! I’m allergic to nuts though….is there any way I could replace it with another flour? I usually use coconut flour when making my gluten-free pancakes, but yours look so good! 🙂
