Homemade Cinnamon Snack Bars

Well, I did a bit of tweaking and came up with a new version that is, quite honestly, delightful!

Homemade Cinnamon Snack Bars

Homemade Cinnamon Snack Bars

Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 2 Cups of Pitted Medjool Dates
  • 1/4 creamy peanut butter
  • 1/2 nuts
  • 2 TBS unsweetened Cocoa Powder
  • 2-3 tsp cinnamon

Instructions

  1. Grease an 8x8 or 9x9 square glass pan.
  2. Add pitted dates and peanut butter to your mixer and combine until you get a nice paste.
  3. Add Cocoa Powder and cinnamon. Blend until a well combined. You should start to see a dough-like consistency form.
  4. Add nuts to blender and pulse until coarsly chopped. Or you can add them in a bowl if you want to keep the nuts whole.
  5. Scoop mixture into pan and press out using a sheet of wax paper. You might need to lightly grease the wax paper because this mixture can tend to be a bit sticky.
  6. Once evenly spread, cover and stick it in the freezer for about an hour.
  7. Once thoroughly chilled, slice into bars.
  8. Store in a sealed container with parchment paper between layers for up to a week. But they probably won't last that long!
  9. Makes about 8-10 bars

    1. Haha! I have to tell you… I had to stop making them for a few days because I was eating them non-stop. Even though they are very healthy, too much of a good thing can still go to your waistline! I have more dates to make them today because the boys are literally begging for them. Uh-oh!
