Homemade Strawberry Cream Cheese: Or When Heaven Came Down

When I was about 9, my sister, Temple, and I scraped our pennies together {and believe me…the scraping went down deep into the couch and behind the bed…} to take our sweet mom out to a nice Mother’s Day lunch.
We, most proudly, took her to this small French {which they now call it “Continental”} Restaurant in Memphis called Paullette’s. I am certain we were a treat to wait upon. Particularly as we sat counting out the million one dollar bills and thirteen thousand pennies to pay the bill.
Anyway…they served the most amazing, fresh and flaky popovers… and tagging along was the most delightful homemade Strawberry Cream Cheese.
Every bite was as if heaven reached down into my tastebuds and slathered them with perfect joy.
Well, today I had a hankering…
A hankering for sweet, heavenly joy such that only Fresh Strawberry Cream Cheese could bring.
I started with a block of cream cheese and softened it in the microwave for just a few seconds.
I chopped up about 5 medium sized strawberries.
Now, let’s take a second and talk about the NInja. I bought this fella about a year ago {which you can easily grab with that amazon affiliate link} because we LOVE to make smoothie,s and my smoothie maker had decided it was time to start spilling it’s guts all over my counters.
Gross. I’d had enough.
I went nuts looking at reviews for blenders and finally closed my eyes and pointed. {not really, but almost}
The Ninja won and, let me just say… It’s incredible.
Ok. So I took it out and piled chopped up strawberries into one of the single serve containers {which are easier to clean that the big guy}.
I sprinkled in about 1TBS of Stevia in the Raw… the powdered kind.
And we went down to whirly-town.
Then I just stirred the cream cheese and strawberry mixture together by hand.
So now my boys don’t have to scavenging in the depths of the couch to take me to Paulette’s. Instead, I’m gifting them with a sweet taste of my childhood with this delicious recipe.
And you guys… I can’t wait to show you what I did with this heavenly concoction! My boys were stuck dummer than a chimpanzee stumbling upon a sixteen-wheeled barrel full of ripening bananas!

Girl… you do need a Ninja. That thing is incredible! I love the single serve containers… they make the best smoothies. Like Sonic. It’s totally ridunculous!
