Turkey Bacon Lettuce Wraps

So, I have to confess. This winter I lost my way juuuust a smidge. I didn’t go crazy and eat tons of sugar and I never ate any gluten. I was glad about that! But somewhere along the way, I decided that nachos were my bff. (NOTE: They are NOT my bff. They were lying to me and now I’m paying for it!)
So, when the nerve in my neck went haywire, I realized that I hadn’t really been taking care of myself. I wasn’t doing yoga every day and eating the best I could. After 6 visits to my wonderful chiropractor, I’m feeling way better and now have my eating back in line.
Enter Turkey Bacon Lettuce Wraps
I don’t eat these often because bacon does have a little sugar in it, but for a splurge, this is a great treat. And the boys LOVE them, so win/win. I think they actually rival my Falafel Chicken Tenders!
The trick to making a great lettuce wrap is the lettuce. The best lettuce is Boston or Bibb, but here I’m making due with iceberg. It works, but there’s a better way to cut it.
Here’s how:
Pull the lettuce off the head very gingerly. You want to get as complete a leaf as possible. Then cut the leaves into rectangular shapes being sure that the long side is the side that will roll easily.
Then just add your condiments.
And fill your wrap with turkey, bacon and cheese.
Once you are happy with your fillings, roll up the wrap and secure with a wooden toothpick.
These would make great apps for a dinner party, too! Fill them with different fillings for a healthy, gluten-free treat.

Yum! That sounds amazing. I haven’t made hummus in a long time. Now, you’ve got me craving it!
I never eat pig meat, so would put in roast beef, turkey bacon, and steamed cauiflower; “dressing” would be Roasted Red Pepper hummus, and a touch of ordinary yellow mustard. Now I’m so hungry, I should go out and buy all the ingredients!
